An ancient Swabian cookie dating back to the 14th century, traditionally flavored with Anise. These days one can find these pretty cookies around the Christmas markets in southern German, Austrian, Swiss cities as well as Alsace France.
I offer these cookies to you in hope of delighting visually as well as flavor, and hopefully for some of you bring back memories of Moms or Grandmothers making these during the holiday season of past.
My cookies always use unbleached flour, natural sugars, and farm fresh eggs when possible. These Springerle cookies do have regular whitened powdered sugar, for now until I can find a wholesale powdered sugar that has not gone thru the whitening process. Real flavors such as the Anise oil, and dried ingredients such as the Anise seed both used in these cookies.

A true Scottish Shortbread, made with real butter, unbleached flour, natural bone char free sugar, and a touch of Sea Salt
The butter flavor in this mildly sweet cookie wakes up your tastebuds, while it's light crisp texture will delight your senses.

That same Scottish shortbread base as my classic, with real mini semisweet chocolate chips added. Depending on the mold used cookies range from 1 oz to 1.4 oz each, thus the 4 oz bag will have 3-4 cookies, and the one pound will have 12-16 cookies.

A long time British favorite, the Custard Cream Biscuit. A wonderful vanilla based cookie made with real Bird's Custard powder. And filled with a custard powder vanilla buttercream.
This is super popular at all my markets.

A wonderful shortbread with that true butter flavor and crisp texture. I use only unbleached flour, natural sugar, real butter, and a splash of sea salt in these cookies.

This cookie is quite large, 4+ inch in diameter and weighs over 3 ounces.

A Gift Treat, Lemon Raspberry, in a beautiful design surely to delight in the traditional German Springerle cookie
This cookie is quite large, 4+ inch in diameter and weighs over 3 ounces.

A cookie spin on the traditional Austrian Linzer tart, as an almond based cookie. They can be filled with raspberry jam as most common, Red Current, Strawberry, Blackberry, or Black Current, you choose on order selection. One pound order would be about 10-12 cookies, depending on mold used.

These are by far the best soft molasses based gingerbread using the recipe from the Tartine bakery, graciously shared on the internet by the bakery.
It has a lovely pepper after bite, and rich flavors from the blackstrap molasses. My customers always rave it is the best gingerbread they have ever eaten.
